Tabitha Twitchit’s Spicy Raisin Dessert

Serves 4 to 6 | Found on page 84 of Peter Rabbit’s Natural Foods Cookbook by Arnold Dobrin

Equipment:

  • saucepan with lid
  • measuring cups and spoons
  • mixing spoon
  • sharp knife
  • cutting board
  • cup

Ingredients:

  • 1 1/2 cup of raisins
  • 3/4 cup water
  • 1 large apple
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/3 cup brown sugar
  • 1/2 cup chopped walnuts or pecans if you like

Measure out and combine raisins and water into a saucepan. Cook slowly for 5 minutes with the lid on.

Cut up the apple into small pieces (no need to peel it, but do eliminate the core). Add to raisins and let that cook slowly for 5 minutes with the lid on.

Put cornstarch into a cup. Add a little water and mix until cornstarch is liquid. Add to raisin/apple mixture, cooking slowly.

Stir in cinnamon, cloves, and brown sugar. Cook slowly until brown sugar is completely melted.

Nuts are a topping to be added for those that like it. I would also recommend whipped cream.
