Scottish Oat Cakes from Epicurious

Makes about 3 dozen cookies | From Epicurious.com

Equipment:

  • mixing bowl
  • measuring cups and spoons
  • mixing spoon
  • rolling pin
  • cookie cutter
  • cookie sheets
  • pot holders
  • cooling wrack

Ingredients:

  • 1 1/2 cups old-fashioned oats
  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chilled solid vegetable shortening
  • 1/4 cup buttermilk

Preheat your oven to 350 Fahrenheit. Prepare your cookie sheets using your preferred grease (we used butter).

Combine your dry ingredients into the mixing bowl beginning with the old-fashioned oats. Sift in the rest of the dry ingredients: flour, sugar, baking soda, and salt. Mix.

Add the vegetable shortening and rub into the dry mixture with your fingers. Should resemble a coarse meal when mixed.

Add buttermilk to the mixture and stir until dough forms.

Roll out the dough onto a floured surface to 1/4 inch thickness.

Cut out cookies with a cookie cutter (2 1/2 inch diameter preferably) and place onto your cookie sheets.

Repeat until all batter is used and cookie sheets are full.

Bake in the oven for about 12 minutes. They are done when they are a pale gold color.

Transfer oat cakes to a cooling rack and enjoy when ready!

We were able to make about 3 dozen. Enjoy with jam or clotted cream!
