Cucumber and Strawberry Salad

Serves approximately 6 | From page 102 of Beatrix Potter’s Country Cooking by Sara Paston-Williams

Equipment:

  • cutting board
  • knives
  • mixing bowl
  • mixing spoon

Ingredients

  • 1 large cucumber
  • 8-12 ounces large strawberries
  • 1 tablespoon chopped tarragon
  • 3 tablespoons dry white wine
  • pinch of caster sugar*
  • salt
  • pepper

*Caster sugar is somewhere between granulated sugar and powdered sugar. If you can’t find it at your grocer, the recipe recommends grinding down granulated sugar to be a little less granular. Do not use powdered sugar.

Clean and cut cucumber and strawberries.

Plate cucumbers and strawberries, alternating pieces of cucumber and strawberry.

In a bowl, combine dry white wine, caster sugar, and tarragon. Stir.

Drizzle dressing over cucumbers and strawberries.

Season with salt and pepper. Chill until ready to serve.
